Ingredients:
3 ripe bananas
1 cup whole wheat flour
1 cup all-purpose flour
3 tablespoons coconut oil
1/2 teaspoon baking soda
1 cup brown sugar
1 tablespoon vanilla essence
1/2 cup chopped walnuts
Instructions:
Preheat the oven to 350°F (175°C).
In a mixing bowl, combine the coconut oil and brown sugar. Whisk them together until smooth.
Mash the bananas separately, then add them to the coconut oil and sugar mixture. Stir well.
Add the vanilla essence to the wet mixture and mix thoroughly.
Combine whole wheat flour, all-purpose flour, and baking soda in another bowl. Mix well.
Gradually fold the dry ingredients into the banana mixture until thoroughly combined.
Add the chopped walnuts to the batter and mix evenly.
Grease a baking pan, pour the batter into it, and spread it out evenly.
Bake in the oven for 45 minutes or until a toothpick inserted into the center comes clean.
Remove from the oven and let the banana bread cool before slicing and serving.
